Quick Brandied Cherries
Here’s an Old Favorite recipe for Brandied Cherries. While
we’ve never seen it in a recipe book, we do know it works.
Select firm ripe perfect Cherries with, or without stems, as you
prefer. Wash Cherries and drain as much water from them as is
possible.
Pack Cherries in jars – allow1/2 cup dry sugar for each quart of
cherries (1/4 cup for a pint jar).
Pack half the jar, whether pint or quart, add half the sugar; finish
packing jar and add balance of sugar.
Then pour down the inside of the jar – so as to disturb as little of
the top sugar as possible, enough really good brandy to moisten the
top layer of sugar. Seal. Store at least a month before using.
This recipe is simply wonderful.
