(Cakes) (Pies) (Cookies) (Hors d'oeuvres) (Salads) (Side Dishes) (Meat Dishes) (Main Dishes) (Drinks) Casa's Recipes Salads Deacon Dave’s Macaroni Salad: This is Deacon Dave’s own recipe. He makes the Salad in a very large metal bowl so if you want a smaller quantity then you will have to cut the recipe in half. The Deacon has had many requests for this recipe. 4 one pound packages of Macaroni. Fill pot with approximately 5 quarts of water – add 1 tablespoon of Wesson Oil to water. Bring water to boil – add 3 to 5 tablespoons Of salt to the boiling water (Deacon Dave uses 3 tablespoon of salt. Once water is boiling slowly add each package of Macaroni – stir While adding. Set timer for 15 minutes. Drain into metal strainer – run cold water over Macaroni right away, Shake strainer while running cold water over Macaroni. Allow to drain a few seconds – while draining, put a couple of spoons in the empty bowl before adding the Macaroni, so the Macaroni won’t stick together. Add the drained Macaroni and mix adding mayo as needed. Continue steps #4 and #5 until all cooked Macaroni has been drained. Once all macaroni is in the metal bowl, add more mayo as needed and stir. Chop one large and one small bottle of Pimientos – add into bowl and stir. Add 3 or 4 small cans chopped olives – stir into salad and stir. Add 2 cups chopped celery and stir. Add 1 cup of chopped sweet pickles and stir. Add 8 chopped hard boiled eggs and stir. Add 1 large chapped yellow onion into salad and stir. There should not be any large chunks of onions. The Deacon adds an additional ˝ cup of chopped onion. Add salt and pepper to taste Cover with foil and place in refrigerator. Several hours later, check and taste the salad. You may need to add more mayo. _________________________________________________________________________ Cranberry Apple Salad: (Great Aunt Rose Santos Recipe. Aunt Rose was one of Nana’s Sisters) 2 Envelopes Knox unflavored gelatin. 2 cups Cranberry Juice Cocktail. 1/3 cup sugar or equivalent non nutritive sweetener. 3 Tbs. spoons Lemon Juice. 1 cup crushed pineapple in Juice. 2 cups chopped celery. Sprinkle gelatin over 1 cup cranberry juice cocktail in sauce pan. Place over low heat, stir constantly until gelatin dissolves, about 3 minutes. Remove from Heat. Stir in sugar. Add remaining cup cranberry juice cocktail and lemon juice. Chill stirring occasionally until mixture is slightly thicker than the consistency of an unbeaten egg white. Fold in crushed Pineapple and juice & celery. Pour into a 5 cup mold or bowl. Chill until firm. Garnish with salad greens. Yield 6 servings. (150 calories each with sugar. 110 calories with substitute.
