Lemon Meringue Pie: (Alice Nightengale’s – Alice was a dear friend of My Mom) Mom’s comments on the recipe “Best yet” ¾ cup sugar 2 Tbs. butter ¼ tsp. salt 1/3 cup lemon juice 3 Tbs. cornstarch 1 tsp. grated lemon rind 2 Tbs. flour one 9 inch baked shell 1 ½ cup boiling water 2 egg whites 2 egg yolks ¼ tsp. salt ¼ cup sugar ¼ cup sugar Mix ¾ cup sugar, ¼ tsp. salt, cornstarch and flour, slowly add boiling water and cook until thick, stirring constantly. Beat egg yolks with ¼ cup sugar until thick; add small amount of hot mixture and stir into remaining mixture. Add butter & cook 3 minutes. Add lemon juice & rind slowly. Cool and pour into baked shell. Make Meringue of egg whites, ¼ tsp. salt, ¼ cup sugar, spread over top, bake in moderate oven (350 degrees) 12 to 15 minutes. |
