(Cakes) (Pies) (Cookies) (Hors d'oeuvres) (Salads) (Side Dishes) (Meat Dishes) (Main Dishes) (Drinks) Casa's Recipes Cookies and Other Desserts Nana Clara Gomes Sugar Cookies (her comment said “Very Good”) All-purpose flour may be used to make these flavorful, crisp cookies: Crisp Sugar Cookies: ½ cup butter 4 tsps. Baking powder 1 ¾ cup sugar 1 egg 3 ¼ cups sifted ¾ tsp. salt All-purpose flour ¼ cup milk Method: Cream butter, add sugar gradually and cream well. Add egg and beat until light and fluffy. Sift dry ingredients together and add to butter mixture alternately with the milk, mixing well after the addition of each. If time permits, chill dough for an hour or so in the coldest part of refrigerator, as it makes the dough easier to roll. Roll to one-eighth inch in thickness and cut into desired shapes. Place on greased cookie sheet and sprinkle cookies with rice flakes and sugar mixture. Bake in a hot oven (400 degrees F.) for eight to 10 minutes, or until browned lightly.
Nana’s Old Fashioned Christmas Sugar Cookies: 2 cups sugar 3 ½ cups or more of Sifted flour 2/3 cups shortening 3 Eggs beaten ½ tsp. salt 3 tbs. water 2 tsps. Baking Powder 1 tsp. Vanilla Cream together sugar & Shortening. Add beaten eggs, water & vanilla. Mix & sift dry ingredients & add to the mixture to form a stiff dough. More flour maybe required depending upon size of eggs. Roll in small quantities to 1/8 inch thickness on slightly floured board. Cut with fancy Christmas Cutters. Bake 6 to 8 min. in a moderate oven at 375 F. Decorate Cookies with colored sugar, tiny candies or chopped nuts Or bake first and then frost with boiled icing.
Old Cornflake Cookies: 2 Egg Whites 1 cup sugar 2 cups Cornflakes 1 cup Shredded Cocoanut 1/8 tsp. Salt ½ tsp. Almond flavoring Beat Egg Whites stiff but not dry, add sugar slowly while continuing to beat. Fold in remaining ingredients. Drop by spoonful on greased baking sheet. Bake at 350 degrees F. 10 to 12 min.
Persimmon Cookies: Nana’s (Deacon Dave’s Grandmother) Recipe Recommended by Deacon Dave 1 cup Persimmon pulp 1 cup Walnuts 1 cup dates 1 cup white sugar ½ cup shortening 1 tsp. soda (in persimmon pulp) 2 cups flour ½ tsp. cloves ½ tsp. cinnamon ½ tsp. nutmeg 1 egg Beat egg and add pulp. Cream shortening & sugar. Add nuts & dates to flour with spices. Blend together. Drop cookies on greased cookie sheet. Bake at 350 degrees 12 – 15 minutes.
Apricot Burritos: (Mrs. La Vern Bowman) Deacon Dave says this one is a tasty treat! This appetizer is a quick energizer and is ideal to serve with a cool drink One 8 ounce package dried apricots, snipped 1 cup water ¼ cup granulated sugar ¼ cup packed brown sugar ¼ teaspoon ground cinnamon ¼ teaspoon ground nutmeg 20 to 25 = 6 inch flour tortillas Cooking oil In small saucepan combine the apricots, water, granulated sugar, brown sugar, cinnamon, and nutmeg. Bring to boiling; reduce heat. Simmer, uncovered, 10 minutes or till fruit is tender and mixture is thickened, stirring occasionally. Cool. To assemble, spoon about 1 tablespoon of the apricot mixture along one edge of each tortilla; roll up. In a 12 inch skillet heat about ¾ inch of cooking oil to 350 degrees. Place 5 tortillas, seam side down, in hot oil. Cook 2 minutes or till golden, turning once. Drain tortillas on paper toweling. Repeat with remaining tortillas. Serve warm or cool. Makes 20 to 25.
