(Cakes) (Pies) (Cookies) (Hors d'oeuvres) (Salads) (Side Dishes) (Meat Dishes) (Main Dishes) (Drinks) Casa's Recipes Cakes German Coffee Cake 3 cups flour 5 tsp. baking powder 1 tsp. salt ¼ tsp. nutmeg ¼ tsp. cinnamon ¾ cup sugar ¼ cup Crisco 2 eggs 1 cup milk Sift all dry ingredients together; work in Crisco as for a pie crust. Add eggs and milk blending lightly, pour into two small square or round pans or one larger oblong pan. They must be greased with Crisco. Cover with sugar mixture given below. Sprinkle evenly with one cup coarsely chopped nuts. Bake 30 min. in moderate oven at 350 F. Topping: 1 cup brown sugar 1/8th. tsp. salt ¼ cup flour ½ tsp. cinnamon ¼ cup Crisco Blend sugar, salt, flour and cinnamon together. Work Crisco in coarsely with fork. ____________________________________________________________ Coffee Cake From the Recipes of Nana, Clara Gomes. Aunt Rose Santos - Sour Cream Coffee Cake: 1 cup sugar ½ cup shortening 2 eggs ½ pint dairy sour cream 1 tsp. vanilla 2 cups sifted flour 1 tsp. baking soda 1 tsp. baking powder ½ tsp. salt 1/3 cup brown sugar ½ cup chopped nuts 2 tsp. cinnamon 2 tbs. soft butter Blend together sugar shortening, eggs, sour cream & vanilla. Sift together flour baking powder & salt. Stir flour mixture into sugar mixture and beat well. Put ½ the batter in a greased angel food pan, Mix brown sugar, nuts, cinnamon and butter with a pastry blender. Sprinkle ½ this mixture over batter in pan, spoon remaining batter & top with rest of sugar nut mixture. Bake in moderate oven 350 F. for 45 to 50 min.
Lemon Sheet Cake: This one was found in an old magazine. Mom (Norma Rezendes) had this in her collection. It looks scrumptious! This cake adds a splash of citrus flavor with lemon pie filling. A rich cream cheese frosting gives it sweetness. It’s easy to make, starting with a convenient cake mix. 1 package (18-1/4 ounces) lemon cake mix 4 eggs 1 can (15-3/4 ounces) lemon pie filling 1 package (3 ounces) cream cheese, softened ½ cup butter or margarine, softened 2 cups confectioners’ sugar 1-1/2 teaspoons vanilla extract In a large mixing bowl, beat the cake mix and eggs until well blended. Fold in pie filling. Spread into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at (350 degrees F) for 18-20 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. In a small mixing bowl, beat cream cheese, butter and confectioners’ sugar until smooth. Stir in vanilla. Spread over cake. Store in the refrigerator. Yield: 30-35 servings.
Apple Crumb Pie: Mom’s Favorite From the looks of the Recipe sheet of paper this is an oldie but goldie. 1 unbaked pie shell 6 Apples; sliced thin 2 tablespoons granulated sugar ½ teaspoon cinnamon 2 tablespoons lemon juice ½ cup brown sugar, firmly packed ½ cup sifted flour 2 tablespoons Crisco 2 tablespoons butter ½ cup nuts – chopped Fill pie shell with sliced apples. Mix granulated sugar, cinnamon and lemon juice. Sprinkle over apples. Mix brown sugar & flour. Cut in Crisco& butter until mixture is like meal. Add nuts & mix. Sprinkle sugar mixture over apples. Bake in hot oven (400 degrees F) 1 one hour |
